Ingredients
  

  • 12 large eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese
  • 1 cup cooked and crumbled bacon or sausage
  • 2 cups diced breakfast potatoes or hash browns
  • 1 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1 cup chopped spinach
  • 6 slices bread cubed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish.
  3. Spread bread cubes evenly in the dish.
  4. Layer cooked potatoes, meat, and vegetables over bread.
  5. Sprinkle shredded cheeses evenly on top.
  6. Whisk eggs, milk, and seasonings in a large bowl.
  7. Pour egg mixture evenly over the layered ingredients.
  8. Gently press ingredients down to soak.
  9. Bake uncovered for 35–45 minutes until center is set.
  10. Let rest 5–10 minutes before slicing and serving.

Notes

You can assemble the casserole the night before and refrigerate overnight.
Swap meats with turkey sausage or keep it vegetarian.
Add mushrooms, tomatoes, or jalapeños for extra flavor.
