Ingredients
  

  • 2 cups cooked mixed beans black, kidney, pinto
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup vegetable broth
  • ½ cup shredded cheese optional
  • Fresh cilantro chopped for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion, garlic, and bell pepper until softened.
  3. Stir in tomato paste and cook for 1 minute.
  4. Add diced tomatoes, mixed beans, and vegetable broth.
  5. Season with cumin, smoked paprika, chili powder, salt, and pepper.
  6. Simmer uncovered for 20–25 minutes until thickened.
  7. Sprinkle cheese on top and cover until melted if using.
  8. Garnish with fresh cilantro before serving.

Notes

Use canned beans for convenience but rinse and drain them well.
Add cooked rice or quinoa to make it extra filling.
Spice level can be adjusted by adding jalapeños or red chili flakes.
Leftovers store well in the refrigerator for up to 4 days.
This dish freezes beautifully for up to 2 months.
