Ingredients

  • 2 cups all-purpose flour – The backbone of the loaf
  • 1 tsp baking soda – Helps it rise
  • ½ tsp baking powder – Extra fluff
  • ½ tsp salt – Essential for flavor balance
  • 1 tbsp ground cinnamon – Cozy spice
  • ¼ tsp nutmeg – Optional adds warmth
  • ½ cup unsalted butter softened – Richness and moisture
  • ¾ cup granulated sugar – Sweet but balanced
  • 2 large eggs – Structure and richness
  • 1 tsp vanilla extract – Flavor booster
  • 1 cup plain yogurt or buttermilk – Moisture magic
  • 2 cups peeled chopped apples – Tart-sweet contrast
  • Optional: ½ cup chopped walnuts or pecans – Crunch factor

Method

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Beat butter and sugar until light and fluffy, add eggs one at a time, then vanilla.
  4. Alternate folding in dry ingredients and yogurt/buttermilk until just combined.
  5. Fold in chopped apples (and nuts if using).
  6. Pour batter into prepared pan, bake 50–60 minutes until toothpick comes out clean.
  7. Cool in pan 10 minutes, then transfer to wire rack to finish cooling.

Notes

  • Overmixing = dense bread; fold gently.
  • Juicy apples keep the loaf moist.
  • Can add raisins, dried cranberries, or glaze for extra flair.
  • Dairy-free? Use coconut yogurt and coconut oil.
  • Vegan? Swap butter, eggs, and yogurt with plant-based alternatives.
