Method
- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Beat butter and sugar until light and fluffy, add eggs one at a time, then vanilla.
- Alternate folding in dry ingredients and yogurt/buttermilk until just combined.
- Fold in chopped apples (and nuts if using).
- Pour batter into prepared pan, bake 50–60 minutes until toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to finish cooling.
Notes
- Overmixing = dense bread; fold gently.
- Juicy apples keep the loaf moist.
- Can add raisins, dried cranberries, or glaze for extra flair.
- Dairy-free? Use coconut yogurt and coconut oil.
- Vegan? Swap butter, eggs, and yogurt with plant-based alternatives.
