Ingredients
  

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup peeled and chopped apple about 1 medium apple
  • cup granulated sugar
  • 1 large egg
  • cup melted butter or vegetable oil
  • ½ cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix chopped apples, sugar, egg, melted butter, milk, and vanilla.
  4. Gently stir the dry ingredients into the wet ingredients until just combined.
  5. Spoon batter into muffin cups about ¾ full.
  6. Bake for 20–25 minutes until golden and a toothpick inserted comes out clean.
  7. Allow muffins to cool for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix to keep muffins tender.
Use sweet and crisp apples like Honeycrisp or Fuji for best flavor.
Add raisins or chopped nuts for extra texture.
Store in an airtight container at room temperature for up to 2 days.
Freeze for longer storage and thaw before serving.
