Ingredients
  

  • 500 g boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 –10 small corn tortillas
  • 1 cup chopped fresh cilantro
  • ½ cup finely diced white onion
  • Lime wedges for serving

Method
 

  1. In a bowl, mix olive oil, lime juice, garlic, and all spices.
  2. Add chicken and marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and cook chicken for 6–8 minutes per side until fully cooked.
  4. Remove chicken, let it rest for 5 minutes, then chop into small pieces.
  5. Warm corn tortillas in a dry pan for 30 seconds per side.
  6. Fill each tortilla with chopped chicken.
  7. Top with cilantro, diced onion, and a squeeze of fresh lime.
  8. Serve immediately and enjoy!

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • You can grill the chicken instead of pan-cooking for a smoky taste.
  • Add salsa verde or hot sauce for extra spice.
  • Use chicken breast if you prefer leaner meat.
