Ingredients
  

  • Fresh pineapple — 500g peeled and sliced
  • Butter — 28g 2 tbsp
  • Brown sugar — 36g 3 tbsp
  • Cinnamon powder — 1g ½ tsp
  • Vanilla extract — 2.5ml ½ tsp
  • Salt — 1g pinch
  • Lime juice optional — 5ml (1 tsp)

Method
 

  1. Slice pineapple into evenly sized rings or chunks.
  2. Heat a skillet over medium heat and melt the butter.
  3. Add brown sugar and stir until it forms a glossy caramel sauce.
  4. Place pineapple slices in a single layer in the pan.
  5. Cook for 2–3 minutes per side until golden and lightly caramelized.
  6. Sprinkle cinnamon, salt, and vanilla extract over the pineapple.
  7. Flip gently and cook another 1–2 minutes until sauce thickens.
  8. Remove from heat and serve warm with extra caramel sauce.

Notes

  • Use medium heat to prevent burning the sugar.
  • Do not overcrowd the pan or pineapple will steam instead of caramelize.
  • Fresh pineapple gives the best flavour, but canned works if drained well.
  • Add chili flakes for a sweet-and-spicy twist.
  • Best served immediately while warm and glossy.
