Cheese & Chicken Quesadillas Crispy, Cheesy Comfort Food

These cheesy chicken quesadillas are golden, crispy on the outside, and perfectly gooey on the inside. Loaded with seasoned chicken and melted cheese, they’re quick to prepare and perfect for busy weeknights. A family-friendly Mexican-inspired favorite that never disappoints.

Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 ½ cups shredded mozzarella or cheddar cheese
  • 4 large flour tortillas
  • 2 tbsp butter or oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika or taco seasoning
  • ¼ cup chopped green onions optional

Method
 

  1. Season shredded chicken with salt, pepper, and paprika.
  2. Heat a skillet over medium heat and add a little butter or oil.
  3. Place one tortilla in the pan and sprinkle cheese evenly over half.
  4. Add seasoned chicken on top of the cheese.
  5. Sprinkle a little more cheese over the chicken.
  6. Fold the tortilla in half and press gently.
  7. Cook 2–3 minutes per side until golden brown and crispy.
  8. Remove from pan and let rest for 1 minute.
  9. Slice into wedges and serve warm.

Notes

  • Use rotisserie chicken for quicker preparation.
  • Cook on medium heat to prevent burning while melting cheese.
  • Add bell peppers or jalapeños for extra flavor.
  • Serve with salsa, sour cream, or guacamole.
