Chicken Enchiladas with Red Sauce – Rich, Saucy Recipe

Ingredients
  

  • 2 cups cooked shredded chicken
  • 8 small flour tortillas
  • cups red enchilada sauce
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 small onion finely chopped
  • 1 tsp garlic powder
  • ½ tsp cumin
  • Salt and pepper to taste
  • Optional: chopped cilantro for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix shredded chicken with garlic, cumin, onion, salt, and pepper.
  3. Spoon chicken mixture into tortillas and roll tightly.
  4. Pour ½ cup red sauce on the bottom of a baking dish.
  5. Place rolled tortillas seam-side down in the dish.
  6. Pour remaining sauce over enchiladas and sprinkle with cheeses.
  7. Bake 20–25 minutes until cheese is melted and bubbly.
  8. Garnish with chopped cilantro before serving.

Notes

  • Use homemade or store-bought red sauce.
  • Tortillas can be lightly warmed to prevent cracking.
  • Perfect served with sour cream or guacamole.
