Ingredients
  

  • 1 lb 450 g sirloin steak, cut into bite-size cubes
  • 1 tbsp 15 ml olive oil
  • 4 tbsp 56 g unsalted butter
  • 3 garlic cloves 9 g, minced
  • 1 tbsp 15 ml lemon juice
  • 1 tsp 5 g Dijon mustard
  • 1 tsp 2 g smoked paprika
  • 1/2 tsp 1 g red pepper flakes
  • 1 tbsp 4 g fresh parsley, chopped
  • 1 tsp 1 g fresh thyme, chopped
  • 1/2 tsp 3 g salt
  • 1/2 tsp 1 g black pepper

Method
 

  1. Pat the steak cubes dry with paper towels and season evenly with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until hot.
  3. Add steak cubes in a single layer and sear for 1–2 minutes per side until browned.
  4. Transfer the steak bites to a plate and set aside.
  5. Reduce heat to medium and melt butter in the same skillet.
  6. Add minced garlic and cook for about 30 seconds until fragrant.
  7. Stir in lemon juice, Dijon mustard, smoked paprika, red pepper flakes, parsley, and thyme.
  8. Return steak bites to the skillet and toss well to coat in the cowboy butter sauce.
  9. Cook for 1–2 minutes more until heated through and well coated.
  10. Serve immediately with extra butter sauce drizzled over the top.

Notes

Use sirloin or ribeye steak for the most tender and flavourful results.
Do not overcrowd the pan or the steak will steam instead of sear.
Let steak sit at room temperature for about 15 minutes before cooking for even searing.
Add extra red pepper flakes if you prefer a spicier cowboy butter sauce.
Serve with roasted potatoes, rice, or crusty bread to soak up the butter sauce.
