Ingredients
  

  • Breakfast sausage – 1 lb
  • Eggs – 8 large
  • Heavy cream – 1/3 cup
  • Cheddar cheese shredded – 1 cup
  • Mozzarella cheese shredded – 1/2 cup
  • Spinach chopped – 1/2 cup
  • Garlic powder – 1/2 tsp
  • Onion powder – 1/2 tsp
  • Salt – to taste
  • Black pepper – to taste
  • Butter – for greasing baking dish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish with butter.
  2. Cook the sausage in a skillet over medium heat until browned and fully cooked.
  3. Spread the cooked sausage evenly in the prepared baking dish.
  4. Whisk eggs, heavy cream, garlic powder, onion powder, salt, and pepper in a bowl.
  5. Stir in spinach and half of the shredded cheese mixture.
  6. Pour the egg mixture over the sausage in the baking dish.
  7. Sprinkle the remaining cheese evenly on top.
  8. Bake for 30–35 minutes until the casserole is set and golden on top.
  9. Let it rest for 5 minutes before slicing and serving.

Notes

You can add mushrooms, bell peppers, or zucchini for extra flavor.
This casserole is perfect for meal prep and stores well in the fridge.
Reheat slices in the microwave or oven for a quick keto breakfast.
Use spicy sausage if you like a little heat.
