Ingredients
  

  • 1 pre-baked 9-inch pie crust Oreo or graham
  • 8 oz 227 g dark chocolate (60–70% cocoa), chopped
  • 1 cup 2 sticks unsalted butter, room temperature
  • 1 1/3 cups granulated sugar
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 1/3 cups cold heavy whipping cream for filling
  • For topping: 1 cup heavy cream 2–4 Tbsp powdered sugar, 1 tsp vanilla extract
  • Optional: chocolate shavings or curls

Method
 

  1. Ensure crust is pre-baked and cooled.
  2. Melt dark chocolate gently and let cool slightly.
  3. Beat room-temperature butter and sugar 3–5 minutes until light and fluffy.
  4. Mix in melted chocolate and vanilla until smooth.
  5. Add eggs one at a time, beating 5 minutes after each until silky and mousse-like.
  6. Whip 1 1/3 cups heavy cream to stiff peaks and fold gently into chocolate mixture.
  7. Pour filling into crust, smooth top, and chill at least 4 hours or overnight.
  8. Whip topping cream with powdered sugar and vanilla, spread or pipe on pie, and garnish with chocolate shavings.
  9. Slice cold for clean cuts and serve.

Notes

Use room-temperature butter and eggs for a smooth filling.
Do not overheat the chocolate to prevent a grainy texture.
Chill thoroughly for the best set and silky texture.
Optional: adjust the chocolate percentage to taste for a milder or richer flavor.
Freeze without topping up to 1 month; thaw in fridge overnight.
