Method
- Heat a large skillet over medium heat and melt butter with olive oil.
- Add diced onion and cook for 2–3 minutes until soft.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add chopped cauliflower and cook for 6–8 minutes, stirring occasionally until slightly golden.
- Add diced ham and paprika and cook for another 3–4 minutes.
- Sprinkle shredded cheddar cheese over the mixture and allow it to melt.
- (Optional) Make small spaces in the hash and crack eggs into the skillet.
- Cover and cook until eggs reach desired doneness.
- Season with salt and black pepper and garnish with chopped parsley before serving.
Notes
Cut cauliflower into small pieces so it cooks faster and browns better.
For extra crispiness, allow the cauliflower to sit undisturbed in the pan for a minute or two.
You can substitute bacon, turkey, or sausage for the ham if desired.
