Ingredients
  

  • Eggs – 10 large
  • Milk – 1 cup
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Olive oil – 1 tablespoon
  • Onion – 1 small diced
  • Bell pepper – 1 cup chopped
  • Spinach – 1 cup chopped
  • Mushrooms – 1 cup sliced
  • Cooked turkey sausage – 1 cup crumbled
  • Shredded cheddar cheese – 1 cup

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with olive oil.
  3. Sauté onion, bell pepper, and mushrooms in a skillet for 5 minutes.
  4. Add spinach and cook until wilted.
  5. Whisk eggs, milk, salt, and black pepper in a large bowl.
  6. Stir in cooked vegetables and turkey sausage.
  7. Pour mixture into prepared baking dish.
  8. Sprinkle shredded cheddar cheese evenly on top.
  9. Bake for 30–35 minutes until center is set.
  10. Let cool for 5–10 minutes before slicing and serving.

Notes

You can substitute turkey sausage with chicken or keep it vegetarian.
Add feta, mozzarella, or pepper jack for flavor variation.
Store leftovers in the refrigerator for up to 4 days.
Freeze individual portions for easy reheating.
Add zucchini or broccoli for extra nutrition.
