Ingredients
  

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or rotini pasta
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup marinara sauce
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Heat olive oil in a large deep skillet or pot over medium heat, add diced chicken and cook until golden and cooked through.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in chicken broth, heavy cream, marinara sauce, and add pasta, Italian seasoning, salt, and pepper.
  4. Stir well, bring to a gentle boil, then cover and simmer for 12–15 minutes until pasta is tender, stirring occasionally.
  5. Reduce heat and stir in Parmesan cheese until melted and creamy.
  6. Sprinkle mozzarella over the top, cover for 2–3 minutes until melted.
  7. Garnish with fresh parsley and serve hot.

Notes

Cut chicken into small even cubes for quick cooking and tender texture.
Stir occasionally while simmering to prevent pasta sticking to the pot.
Add a splash of broth or cream if sauce thickens too much before pasta cooks.
Freshly grated Parmesan melts smoother and enhances flavor.
