Ingredients
  

  • 6 ripe tomatoes chopped
  • 1 cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1 small red onion chopped
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cold water adjust for consistency

Method
 

  1. Add tomatoes, cucumber, bell pepper, onion, and garlic to a blender.
  2. Blend until completely smooth and creamy.
  3. Add olive oil, red wine vinegar, salt, and black pepper.
  4. Blend again until fully combined.
  5. Add cold water gradually to reach desired consistency.
  6. Taste and adjust seasoning if needed.
  7. Transfer to a bowl or pitcher and refrigerate for at least 1 hour.
  8. Stir well before serving and garnish if desired.
