Ingredients
  

  • 2 boneless skinless chicken breasts diced
  • 1 cup long grain white rice rinsed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • ½ cup frozen peas optional
  • Fresh parsley chopped for garnish

Method
 

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add diced chicken, season with salt, pepper, and paprika, and cook until golden.
  3. Remove chicken and set aside.
  4. In the same skillet sauté onion until soft.
  5. Add garlic and cook for 30 seconds.
  6. Stir in rice and toast lightly for 1 minute.
  7. Pour in chicken broth and bring to a gentle boil.
  8. Reduce heat, cover, and simmer for 15 minutes.
  9. Stir in heavy cream, parmesan, thyme, and cooked chicken.
  10. Add peas if using and cook for 5–7 minutes until creamy and tender.
  11. Adjust seasoning and garnish with fresh parsley before serving.
