Ingredients
  

  • White fish fillets cod or haddock – 4 pieces
  • Almond flour – ¾ cup
  • Parmesan cheese grated – ¼ cup
  • Eggs beaten – 2 large
  • Garlic powder – 1 teaspoon
  • Paprika – ½ teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Zucchini cut into fry shapes – 2 medium
  • Olive oil – 2 tablespoons
  • Lemon wedges – for serving

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Line a baking tray with parchment paper.
  3. In a bowl mix almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip fish fillets into beaten eggs then coat well with the almond flour mixture.
  5. Place coated fish on the prepared tray.
  6. Toss zucchini fries with olive oil, salt, and pepper then spread on the tray.
  7. Bake for 18–20 minutes until fish is crispy and cooked through.
  8. Flip zucchini fries halfway through cooking for even crispiness.
  9. Serve hot with lemon wedges.

Notes

Pat fish dry before coating for extra crispiness.
You can air fry instead of baking for an even crunchier texture.
Try serving with keto tartar sauce.
Zucchini fries are a great low-carb alternative to potatoes.
