  • Fresh peaches sliced – 5 cups
  • Granulated sugar – 1 cup
  • Brown sugar – ½ cup
  • All-purpose flour – 1 cup
  • Unsalted butter melted – ½ cup
  • Milk – 1 cup
  • Baking powder – 2 tsp
  • Salt – ¼ tsp
  • Ground cinnamon – ½ tsp
  • Vanilla extract – 1 tsp
  • Lemon juice – 1 tbsp

Method
 

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, toss sliced peaches with lemon juice, cinnamon, and half the sugar.
  3. Pour melted butter into a baking dish.
  4. In another bowl, whisk flour, remaining sugar, baking powder, and salt.
  5. Stir in milk and vanilla to form a smooth batter.
  6. Pour batter over butter without mixing.
  7. Spoon peach mixture evenly over the batter.
  8. Bake for 40 minutes until golden and bubbling.
  9. Cool slightly before serving.

Use ripe, sweet peaches for best flavor.
