Ingredients
  

  • 1 medium head of cauliflower chopped
  • 3 tbsp unsalted butter
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 clove garlic minced
  • Salt to taste
  • Pepper to taste
  • Fresh chives chopped (optional)

Method
 

  1. Transfer cauliflower to a blender or food processor.
  2. Add butter, heavy cream, Parmesan, garlic, salt, and pepper.
  3. Blend until smooth and creamy.
  4. Taste and adjust seasoning, adding more salt, pepper, or butter if desired.
  5. Garnish with chopped chives before serving.

Notes

For extra creaminess, add a bit more heavy cream or butter; garlic can be roasted for a milder flavor.
