Ingredients
  

For the Crust:
  • 1 ½ cups graham cracker crumbs
  • cup light brown sugar
  • ½ cup unsalted butter melted
  • Pinch of salt
For the Filling:
  • 4 large egg yolks
  • 1 tablespoon lime zest
  • 2 14-ounce cans sweetened condensed milk
  • ¾ cup key lime juice
For the Topping (Optional):
  • 1 ½ cups heavy cream whipped
  • 1 –2 tablespoons powdered sugar
  • Extra lime zest or lime slices for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, brown sugar, melted butter, and salt until combined.
  3. Press mixture firmly into a 9-inch pie dish and bake for 8–10 minutes until lightly golden.
  4. Whisk egg yolks and lime zest until pale and slightly thickened.
  5. Add sweetened condensed milk and whisk until smooth.
  6. Slowly whisk in key lime juice until mixture thickens.
  7. Pour filling into pre-baked crust and smooth the top.
  8. Bake for 15–18 minutes until edges are set and center slightly jiggles.
  9. Cool completely, then refrigerate for at least 3 hours before serving.
  10. Top with whipped cream and garnish with lime zest or slices before slicing.

Notes

Do not overbake—the center should still jiggle slightly.
Chill thoroughly for clean slices and the best texture.
Bottled key lime juice works well if fresh key limes are unavailable.
Zest limes before juicing for easier prep.
