Ingredients
  

  • 2 cups Greek yogurt
  • 3 tbsp honey or maple syrup
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • ½ tsp vanilla extract
  • pinch of salt
  • 1 cup crushed graham crackers or granola
  • 1 cup fresh berries optional.

Method
 

  1. In a bowl, mix Greek yogurt, honey, lemon zest, lemon juice, vanilla, and salt until smooth and creamy.
  2. Add a spoonful of crushed graham crackers or granola to the bottom of each serving cup.
  3. Spoon lemon yogurt mixture over the crunchy layer and smooth evenly.
  4. Add fresh berries if desired and repeat layering as needed.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with extra lemon zest or a drizzle of honey before serving.

Notes

Use full-fat Greek yogurt for extra creaminess; adjust sweetness to taste; chill longer for a thicker texture; store in airtight containers in the fridge up to 3–4 days; add nuts or coconut flakes for extra crunch.
