Method
- Heat olive oil in a large pot over medium heat and brown the beef evenly.
- Add chopped onion and garlic and sauté until fragrant.
- Stir in tomato paste, thyme, salt, and pepper.
- Pour in beef broth and bring to a gentle boil.
- Add potatoes and carrots and simmer for 25 minutes.
- Stir in cabbage and cook for another 10 minutes until tender.
- Adjust seasoning if needed and serve warm.
Notes
For extra flavor, add a splash of Irish stout while simmering.
