Ingredients
  

  • 1 lb beef stew meat
  • 4 medium potatoes peeled and cubed
  • 2 carrots sliced
  • 1 onion chopped
  • 2 cups cabbage chopped
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat and brown the beef evenly.
  2. Add chopped onion and garlic and sauté until fragrant.
  3. Stir in tomato paste, thyme, salt, and pepper.
  4. Pour in beef broth and bring to a gentle boil.
  5. Add potatoes and carrots and simmer for 25 minutes.
  6. Stir in cabbage and cook for another 10 minutes until tender.
  7. Adjust seasoning if needed and serve warm.

Notes

For extra flavor, add a splash of Irish stout while simmering.
