Ingredients
  

  • 1 unbaked 9-inch pie crust homemade or store-bought
  • 2 –2½ cups pecan halves toasted
  • 1 cup pure maple syrup
  • ¾ –1 cup packed light or dark brown sugar
  • ½ cup unsalted butter melted
  • 3 large eggs
  • 3 –4 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Optional: pinch of cinnamon or flaky salt for topping

Method
 

  1. Preheat oven to 350°F (175°C) and fit crust into 9-inch pie dish.
  2. Toast pecans 8–10 minutes until fragrant; let cool.
  3. Whisk eggs until smooth, then mix in brown sugar, maple syrup, melted butter, bourbon, vanilla, and salt until fully combined.
  4. Stir in cooled pecans, pour filling into crust, and arrange extra pecans on top if desired.
  5. Bake 50–60 minutes until center is set with slight jiggle; tent edges with foil if browning too fast.
  6. Cool completely on a rack at least 2–3 hours before slicing.
  7. Serve with whipped cream or ice cream if desired.

Notes

Do not overbake—the center should jiggle slightly to stay gooey.
Use good-quality bourbon for the best flavor.
Cool completely before cutting to avoid runny filling.
Store at room temp covered, or freeze for up to 2 months.
Optional: sprinkle cinnamon or flaky salt on top for a gourmet touch.
