Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 can 10.5 oz cream of chicken soup
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 sleeve buttery crackers crushed
  • 4 tablespoons butter melted

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. In a large bowl, mix cottage cheese, sour cream, cream of chicken soup, cream cheese, garlic powder, onion powder, salt, and pepper until combined.
  4. Fold in shredded chicken and cheddar cheese until evenly mixed.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Combine crushed crackers with melted butter in a small bowl.
  7. Sprinkle the buttery cracker mixture evenly over the casserole.
  8. Bake for 35–40 minutes until hot, bubbly, and golden on top.
  9. Let the casserole rest for 5–10 minutes before serving

Notes

Use rotisserie chicken for faster preparation and extra flavour.
Allow the casserole to rest before serving so it sets properly.
