Method
- Remove stems and seeds from dried chiles and toast lightly in a dry pan.
- Soak chiles in hot water for 15 minutes until softened.
- Heat oil and sauté onion, garlic, and tomato until soft.
- Toast almonds, sesame seeds, and tortilla until golden.
- Blend softened chiles, sautéed vegetables, nuts, tortilla, spices, and broth until smooth.
- Pour sauce into a pot and simmer for 20–25 minutes, stirring often.
- Add dark chocolate and stir until melted and combined.
- Add cooked chicken and simmer 10 minutes to absorb flavor.
- Season with salt and garnish with sesame seeds before serving.
Notes
- Adjust the chocolate quantity for more or less sweetness.
- Blend the sauce thoroughly for a silky texture.
- Sauce thickens as it cooks. Add broth if needed.
- Tastes even better the next day, after flavors deepen.
