Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup melted butter or vegetable oil
  • ¾ cup milk or buttermilk
  • 1 tsp vanilla extract
  • cups fresh or frozen berries blueberries, strawberries, raspberries, or mixed
  • Optional: 1 tsp lemon zest
  • Optional: ¼ cup white chocolate chips
  • Optional: streusel topping or coarse sugar for topping

Method
 

  1. Preheat oven to 375°F (190°C) and line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, melted butter, milk, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fold in berries lightly without overmixing.
  6. Divide batter evenly into muffin cups, filling about ¾ full.
  7. Sprinkle optional topping if desired.
  8. Bake 18–22 minutes until golden and a toothpick inserted in the center comes out clean.
  9. Cool in pan 5 minutes, then transfer to a wire rack.

Notes

Do not overmix the batter to keep muffins soft and fluffy.
Toss frozen berries in a little flour to prevent sinking.
Do not thaw frozen berries before adding to the batter.
Store in an airtight container at room temperature for up to 3 days.
Freeze individually wrapped muffins for up to 3 months.
