No-Bake Peanut Butter Oreo Bars Recipe

Ingredients
  

  • 24 –30 Oreo cookies
  • ½ cup unsalted butter melted
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • cups heavy whipping cream cold
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream for ganache

Method
 

  1. Line an 8x8 or 9x9-inch pan with parchment paper.
  2. Crush Oreos into fine crumbs and mix with melted butter.
  3. Press Oreo mixture into the bottom of the pan and chill.
  4. Beat peanut butter, powdered sugar, vanilla, and cream cheese until smooth.
  5. Whip 1½ cups heavy cream to stiff peaks and fold into peanut butter mixture.
  6. Spread filling evenly over Oreo crust and chill 30 minutes.
  7. Heat ½ cup heavy cream, pour over chocolate chips, stir to make ganache.
  8. Pour ganache over filling and chill 2–4 hours until set.
  9. Cut into bars and serve.

Notes

  • Use regular creamy peanut butter for the best results.
  • Chill thoroughly for clean slices.
  • Parchment overhang makes lifting bars easy.
  • Can swap heavy cream with coconut cream for a dairy-free version.
  • Keeps in fridge up to 5 days, freeze for up to a month.
