Ingredients
  

  • 2 cups oat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • teaspoons ground cinnamon
  • 2 medium apples peeled and diced
  • ½ cup brown sugar or honey
  • 2 large eggs
  • cup melted coconut oil or butter
  • ½ cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a bowl, whisk together oat flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix eggs, sugar or honey, melted coconut oil, milk, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Fold in diced apples gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool before slicing and serving.

Notes

Use finely ground oat flour for the best texture.
Do not overmix the batter to keep the bread soft.
You can add chopped walnuts or raisins for extra flavor.
Store in an airtight container at room temperature for up to 2 days.
Refrigerate for longer storage or freeze slices for later.
