Method
- Preheat oven to 180°C (350°F) and lightly grease a 9x13-inch baking dish.
- Toss sliced peaches with 2 tbsp granulated sugar, ½ tsp cinnamon, and nutmeg. Spread evenly in the dish.
- In a bowl, mix flour, remaining sugar, brown sugar, baking powder, and salt.
- Add milk, melted butter, and vanilla extract. Stir until smooth to form batter.
- Spoon batter over the peaches; rustic coverage is fine.
- Sprinkle remaining cinnamon and sugar on top.
- Bake 35–40 minutes until crust is golden brown and bubbling around edges.
- Let cool slightly before serving with vanilla ice cream if desired.
Notes
- Using fresh peaches gives best texture; frozen works if thawed and drained.
- Avoid overmixing batter to keep crust light and tender.
- Serve warm for best flavour and texture.
- Can add a splash of bourbon or rum for extra depth of flavour.
