Ingredients
  

  • Fresh peaches – 6–7 large peeled and sliced
  • Granulated sugar – 150 g plus 2 tbsp for sprinkling on peaches
  • Brown sugar – 50 g
  • All-purpose flour – 180 g
  • Baking powder – 2 tsp
  • Salt – ¼ tsp
  • Milk – 120 ml
  • Unsalted butter – 60 g melted
  • Vanilla extract – 1 tsp
  • Cinnamon – 1 tsp
  • Nutmeg – ¼ tsp

Method
 

  1. Preheat oven to 180°C (350°F) and lightly grease a 9x13-inch baking dish.
  2. Toss sliced peaches with 2 tbsp granulated sugar, ½ tsp cinnamon, and nutmeg. Spread evenly in the dish.
  3. In a bowl, mix flour, remaining sugar, brown sugar, baking powder, and salt.
  4. Add milk, melted butter, and vanilla extract. Stir until smooth to form batter.
  5. Spoon batter over the peaches; rustic coverage is fine.
  6. Sprinkle remaining cinnamon and sugar on top.
  7. Bake 35–40 minutes until crust is golden brown and bubbling around edges.
  8. Let cool slightly before serving with vanilla ice cream if desired.

Notes

  • Using fresh peaches gives best texture; frozen works if thawed and drained.
  • Avoid overmixing batter to keep crust light and tender.
  • Serve warm for best flavour and texture.
  • Can add a splash of bourbon or rum for extra depth of flavour.
