Ingredients
  

  • 24 Oreo cookies classic or double-stuf
  • 2 cups peanut butter ice cream slightly softened
  • ½ cup chocolate chips or chunks optional drizzle
  • 1 teaspoon coconut oil for smooth chocolate drizzle
  • Sprinkles or chopped peanuts optional for garnish

Method
 

  1. Lay Oreo cookies flat on a plate or tray.
  2. Scoop 2 tablespoons of softened peanut butter ice cream onto the flat side of one cookie.
  3. Place another Oreo on top and gently press.
  4. Melt chocolate chips with coconut oil and drizzle over sandwiches (optional).
  5. Freeze sandwiches for 30–60 minutes to firm up.
  6. Optional: roll edges in chopped peanuts, sprinkles, or cookie crumbs.
  7. Serve and enjoy!
