Ingredients
  

  • 1 cup creamy peanut butter
  • 3 tablespoons unsalted butter
  • 1 cup powdered sugar
  • 2 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or butter optional for melting chocolate

Method
 

  1. In a saucepan melt peanut butter and butter together over low heat until smooth.
  2. Remove from heat and stir in powdered sugar until fully combined.
  3. Fold in Rice Krispies cereal and mix gently until coated.
  4. Roll the mixture into small balls and place on a parchment-lined tray.
  5. Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
  6. Dip each ball partially or fully in melted chocolate.
  7. Place back on the tray and refrigerate for 10–15 minutes until chocolate sets.
  8. Serve and enjoy.

Notes

Use creamy peanut butter for smoother texture.
If the mixture is sticky, chill it for a few minutes before rolling.
White chocolate can be used instead of semi-sweet chocolate.
Store in an airtight container in the refrigerator for up to 5 days.
You can drizzle extra chocolate on top for decoration.
