Method
- In a saucepan melt peanut butter and butter together over low heat until smooth.
- Remove from heat and stir in powdered sugar until fully combined.
- Fold in Rice Krispies cereal and mix gently until coated.
- Roll the mixture into small balls and place on a parchment-lined tray.
- Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
- Dip each ball partially or fully in melted chocolate.
- Place back on the tray and refrigerate for 10–15 minutes until chocolate sets.
- Serve and enjoy.
Notes
Use creamy peanut butter for smoother texture.
If the mixture is sticky, chill it for a few minutes before rolling.
White chocolate can be used instead of semi-sweet chocolate.
Store in an airtight container in the refrigerator for up to 5 days.
You can drizzle extra chocolate on top for decoration.
