  • 1 3.4 oz box instant pistachio pudding mix
  • 2 cups cold milk
  • ½ cup heavy cream optional for extra creaminess
  • ¼ cup chopped pistachios
  • 1 teaspoon vanilla extract
  • Whipped cream for topping optional
  • Pineapple chunks optional, for variation

Method
 

  1. Pour pudding mix into a bowl.
  2. Add cold milk and whisk for 2 minutes until thickened.
  3. Stir in heavy cream and vanilla extract until smooth.
  4. Fold in chopped pistachios and pineapple chunks if using.
  5. Cover and chill in the refrigerator for 30–60 minutes.

Notes
