Ingredients
  

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 celery stalks sliced
  • 1 cup zucchini chopped
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp turmeric powder
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • Salt to taste
  • 1 tbsp fresh parsley chopped

Method
 

  1. Heat butter and olive oil in a large pot over medium heat
  2. Add onion and garlic then sauté until fragrant
  3. Stir in celery and zucchini and cook for 5 minutes
  4. Add shredded chicken and mix well
  5. Pour in chicken broth and bring to a gentle boil
  6. Reduce heat and simmer for 15 minutes
  7. Stir in heavy cream turmeric thyme salt and pepper
  8. Simmer for another 5 minutes until slightly thickened
  9. Garnish with fresh parsley and serve hot

Notes

Use rotisserie chicken for quicker preparation
Add spinach or kale for extra nutrients
Adjust cream quantity for desired thickness
Store leftovers in an airtight container for up to 3 days
Freeze without cream for best reheating results
