Ingredients
  

  • 3 cups all-purpose flour
  • cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup 1 stick cold unsalted butter, cubed
  • 1 cup raisins
  • 1 cup heavy cream or buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Extra egg or milk for brushing optional
  • Coarse sugar for sprinkling optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Whisk flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in raisins evenly.
  5. Whisk egg, vanilla, and cream/buttermilk; pour into dry ingredients and gently mix until just combined.
  6. Turn dough onto floured surface, pat into 1-inch thick round, cut into 8 wedges.
  7. Place on baking sheet, brush tops with egg/milk, sprinkle coarse sugar if desired.
  8. Bake 15–20 minutes until golden brown; cool slightly before serving.

Notes

Overmixing makes scones tough—mix gently.
Keep butter cold for a flaky texture.
Raisins can be soaked to stay plump.
Freeze unbaked wedges for later baking.
