Ingredients
  

  • 2 cups masa harina
  • 1 ¼ cups warm water
  • ½ tsp salt
  • 1 cup refried beans
  • 1 cup shredded cooked chicken or beef optional
  • ½ cup crumbled queso fresco or cotija cheese
  • ½ cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup sour cream
  • 2 tbsp vegetable oil

Method
 

  1. Mix masa harina, warm water, and salt to form a soft dough.
  2. Divide dough into 8 portions and shape into thick discs.
  3. Heat a skillet with oil and cook discs 2–3 minutes per side until lightly golden.
  4. Press edges slightly to create a raised rim on each sope.
  5. Spread refried beans evenly over each sope.
  6. Top with shredded meat, lettuce, tomatoes, and cheese.
  7. Drizzle with sour cream if desired and serve warm.

Notes

  • Use fresh masa for extra authentic flavor.
  • Don’t overcook to keep sopes tender inside.
  • Sopes are best eaten immediately but can be reheated in a skillet.
  • Add salsa or hot sauce for extra zing.
