Ingredients
  

  • 2 lbs Yukon Gold potatoes sliced
  • 6 strips bacon chopped
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1/4 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 2 tbsp chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Boil sliced potatoes in salted water until fork-tender, then drain.
  2. Cook chopped bacon in a skillet until crispy, then remove and set aside.
  3. In the same skillet sauté onion and garlic in bacon fat until soft.
  4. Stir in vinegar, mustard, sugar, and chicken broth and simmer briefly.
  5. Add warm potatoes to the skillet and gently toss to coat.
  6. Stir in crispy bacon and season with salt and pepper.
  7. Sprinkle with fresh parsley and serve warm.
