Ingredients
  

  • All-purpose flour – 1 ½ cups
  • Baking powder – 1 ½ tsp
  • Salt – ¼ tsp
  • Unsalted butter softened – ½ cup
  • Granulated sugar – ¾ cup
  • Eggs – 2 large
  • Vanilla extract – 2 tsp
  • Milk – ½ cup

Method
 

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time until smooth.
  5. Mix in vanilla extract.
  6. Add dry ingredients alternating with milk until just combined.
  7. Fill liners about ⅔ full with batter.
  8. Bake 16–18 minutes until tops spring back lightly.
  9. Cool in pan 5 minutes then transfer to rack to cool completely.

Do not overmix batter to keep cupcakes fluffy.
