Method
- Preheat oven to 375°F (190°C).
- Grease a muffin tin or line with silicone muffin cups.
- In a large bowl whisk together eggs and heavy cream until smooth.
- Add cheese, bacon, bell pepper, spinach, garlic powder, salt, and pepper then mix well.
- Pour the egg mixture evenly into the muffin cups.
- Bake for 18–20 minutes until set and lightly golden on top.
- Allow muffins to cool slightly before removing from the pan.
- Serve warm or store for meal prep.
Notes
You can swap bacon with sausage or turkey for variety.
Add mushrooms or zucchini for extra vegetables.
Store in the refrigerator for up to 4 days.
Reheat quickly in the microwave for a fast breakfast.
