Ingredients
  

  • Ground beef – 1 1/2 lb
  • Almond flour – 1/2 cup
  • Eggs – 2 large
  • Onion finely chopped – 1/4 cup
  • Garlic minced – 2 cloves
  • Sugar-free ketchup – 1/4 cup
  • Worcestershire sauce – 1 tbsp
  • Cheddar cheese shredded – 1/2 cup
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Italian seasoning – 1 tsp
  • Olive oil – 1 tbsp

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish or loaf pan.
  2. In a large bowl, combine ground beef, almond flour, eggs, onion, garlic, and cheddar cheese.
  3. Add Worcestershire sauce, salt, pepper, and Italian seasoning, then mix until well combined.
  4. Shape the mixture into a loaf and place it in the prepared baking dish.
  5. Spread sugar-free ketchup evenly over the top of the meatloaf.
  6. Bake for 45–50 minutes until fully cooked and juicy inside.
  7. Let the meatloaf rest for 8–10 minutes before slicing and serving.

Notes

Use a mix of ground beef and ground pork for extra juiciness.
Do not overmix the meat to keep the texture tender.
You can add chopped mushrooms for more moisture and flavor.
Leftovers taste even better the next day and reheat well.
