Ingredients
  

  • 3 lbs beef chuck or lamb shoulder
  • 3 dried guajillo chilies seeds removed
  • 2 dried ancho chilies seeds removed
  • 4 garlic cloves
  • 1 medium onion chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp cloves
  • 2 bay leaves
  • 1 cup beef broth
  • ¼ cup apple cider vinegar
  • Salt and pepper to taste

Method
 

  1. Soak dried chilies in hot water for 20 minutes until soft.
  2. Blend chilies, garlic, onion, cumin, oregano, cloves, vinegar, and ½ cup broth into a smooth sauce.
  3. Season meat with salt and pepper.
  4. Place meat in a slow cooker and pour chili sauce over it.
  5. Add remaining broth and bay leaves.
  6. Cover and cook on low for 6 hours until meat is tender and shreds easily.
  7. Remove meat and shred with forks, mixing back into the sauce.
  8. Serve hot with tortillas, rice, or beans.

Notes

  • For extra flavor, marinate meat in the sauce overnight.
  • Adjust chili spice according to preference.
  • Leftovers store well in the fridge for 3–4 days.
  • Can be frozen for up to 2 months.
